The usual advice is to pick stars well separated in azimuth and between 30
and 60 degrees altitude (this usually rules out Fomalhaut and Antares).
Aside from that, I have noticed little difference in pointing accuracy
based on which stars I picked. (Note, too, that Polaris works just fine.)
By far the most important thing is to use a reticle eyepiece and work
carefully. And don't rotate the diagonal between the first and second
stars!
