I agree. It is nearly impossible to adjust with just one hand (though it
is completely trivial with two). My solution is to wrap a string or a
strap around the seat from front to back (so that the strap goes between
you legs). I am then able to adjust with one hand by grabbing the strap
instead of the seat itself.
